INGREDIENTS

600 g Frijobel black tiger shrimp 

500 g white bean

1 onion

100 g crushed tomato

1/2 poivron rouge

2 gousses d'ail

a drizzle of extra virgin olive oil 

1 cube of seafood stock

100 ml white wine

1/2 teaspoon sweet paprika

1 pincée de poivre blanc

1 feuille de laurier

Tabasco, as needed

Sel, au besoin

Fresh coriander

  

INSTRUCTIONS

STEP BY STEP

    cozer-os-camaroes

    Start by cooking the shrimp in water seasoned with salt, tabasco and onion skin (the latter will give more colour to the seafood and will accentuate its flavour).

    descascar-os-camaroes

    After boiling for 5 minutes, remove the shrimps, strain the broth and reserve. Peel the shrimp and leave 3-4 whole for garnishing.

    refogar-vegetais

    Heat the olive oil and sauté the onion and the chopped garlics, when they soften, add the crushed tomatoes, the peppers in strips and the bay leaf.

    Let it cook for 5 minutes, reduce the mixture to purée, let it cook a little and add the white wine, letting it reduce by half.

    adicionar-o-feijao

    Add the drained beans and some of the shrimp broth you have reserved.

    Then season with salt, seafood stock cube and white pepper, cooking for 5 minutes.

    acrescentar-os-camaroes

    Finally, add the shrimp cut into pieces and correct the salt and the tabasco. Cook for another 5 minutes and serve hot sprinkled with coriander.
