INGREDIENTS

250g 20/40 shrimp pud Frijobel

a good pinch of ground garlic

1 pizzico di pepe bianco

Sale, quanto necessario

Extra virgin oil

Chilli flakes

2 avocados

Succo di limone

250g Paris mushrooms

100g chicory

100g lettuce beaded

 50g lettuce

1 Serra da Estrela soft goat cheese

100g de lamb’s lettuce

1 pack of garlic and parsley croutons

Honey, as needed

Balsamic Vinegar

 

INSTRUCTIONS

STEP BY STEP

    Defrost the shrimp and season with salt, pepper, ground garlic and chilli flakes. Set aside for 1 hour.

    Heat the oil, add the crushed garlic clove and sauté the shrimp until they change colour. When they are ready, put them on a plate.

    Add a little more oil to the skillet, let it warm up and add the laminated mushrooms. Season with salt, a good pinch of ground garlic and pepper. Sauté for a few minutes until tender. Set aside.

    Cut the avocado into slices and drizzle them with lemon juice. Tear the lettuce into small pieces.

    In a serving dish, add the shrimp and mushrooms, both drained. Add lettuce, the lamb’s lettuce, the avocado and the croutons.

    Crumble the curd and gently wrap the salad. Season with balsamic vinegar cream and drizzle with honey to taste.
