INGREDIENTS

4 gold quails (150-80 g)

1 large onion

4 cloves of garlic 

1/2 teaspoon fresh, organic, thyme leaves

3 tablespoons extra virgin olive oil

1 apple cider

Salt, as needed

8 16/20 Frijobel Black Tiger shrimps

250 g shiitake mushrooms, organic

1 teaspoon sweet paprika 

1 pinch of white pepper

400 ml water

Chilli sauce, as needed

 

INSTRUCTIONS

STEP BY STEP

    Start by washing the quail thoroughly, paying attention to any down they may have.

    Season them with salt and pepper (inside and out) and reserve for 2 hours.

    Heat the oil, add the garlic cloves and onion, both chopped and let it soften slightly.

    Add the quails and cook them until golden brown on both sides. Drizzle with the cider and let it simmer a little. Cook over high heat and add water.

    When the quails are tender, add the whole mushrooms and cook for another 5 minutes. Serve the quails with white rice or raisin rice.
