Start by boiling the shrimp in boiling water (about 1 litre) seasoned with salt, onion skin and chilli sauce. Let them cook for 8 minutes, peel them, reserve them.
Cut the bread into pieces and add the broth, letting it soften well.
Heat the olive oil and add the sliced garlic cloves, let them release the flavour for 1 minute and add the peeled shrimp. Season with a little salt, pepper and add half the chopped coriander.
Sauté for a while and add the soaked bread, mix it thoroughly until it becomes a soft açorda and cook some more (if it is too dry, add a little water).
Add the remaining coriander and add the egg, which should wrap well in the açorda. Serve immediately.
