STEP BY STEP
Start by scaling the sardines and cut off their heads and tails, open them with the tip of a very sharp knife, cut a blow along the back.
Remove bones and guts and cut each sardine into four strips of similar size or two, if they are small.
Season the fish with salt and pepper and let it marinate for 1 hour.
Afterwards, pass the sardine strips in flour, beaten egg and breadcrumbs Pass the fish again in the egg and bread and fry in hot oil.
