INGREDIENTS

1 package of Frijobel fish stew mix 

3 tomatoes

1/2 teaspoon tomato paste 

1/2 red pepper

1/2 green pepper 

1/2 yellow pepper

1 large onion

3 cloves of garlic

400 ml coconut milk

1 dl dendê/palm oil (or olive oil)

1 lima

1/2 lemon

Chilli sauce 

Chopped coriander

1 pinch of white pepper 

Salt, as needed

1 cup vaporized rice  

1 cup water 

1 onion chips

 Salt, as needed

INSTRUCTIONS

    prepare-a-marinada

    Zest the lemon and the lime and extract their juice. Drizzle the fish and the clams with the juice and the zest and season with salt and pepper. Marinate for 30 minutes.

    prepare-os-vegetais

    Cut the onion into slices and put them in a wide container, add the clean and sliced peppers and also the coarsely chopped tomatoes. Mix well.

    In a large saucepan, pour half of the dendê oil and fill with half of the vegetable mixture. Add the fish and the whole marinade and cover with the rest of the vegetables.

    Season with a little more salt, tomato paste and chilli sauce. Drizzle with 100 ml of water and coconut milk. Bring to the boil and, when it boils for 5 minutes, lower the temperature and cook, covered, for 30 minutes.

    Put some water in a pot with an onion. Season with salt and, when it comes to a boil, add the rice. Mix and cook, over low heat, with the pan covered for about 12 minutes or until the water is completely absorbed.
