INGREDIENTS

4 medium-size clean Frijobel cuttlefish

12 Frijobel 41/50 black tiger shrimp

1 large onion

3 cloves of garlic 

a drizzle of extra virgin olive oil

1 bay leaf, organic

1 stalk of parsley

1 stalk of coriander

3 mini peppers (red, orange and yellow)

3 tomatoes

3 tablespoons tomato pulp

250ml craft (white) beer

Chilli sauce

1 pinch of white pepper

Salt 

Chopped coriander, as needed

400g pasta

 

INSTRUCTIONS

STEP BY STEP

    Start by cutting the cuttlefish into small cubes or strips.

    Heat the olive oil and add the finely chopped onion and garlic cloves. Let it soften.

    On a low heat, add the bay leaf and the diced tomato and the tomato pulp. Sauté for 5 minutes and drizzle with the craft beer letting it evaporate.

    Add the cuttlefish, the peppers, the coriander and the parsley. Season with salt, pepper and chilli sauce. Sauté for a while and cover with water. Cook for 15 minutes.

    Add the pasta and the shrimp. Add some more water, cover and cook until the pasta is al dente.

    Correct the seasoning and serve hot sprinkled with chopped coriander.
