INGREDIENTS

800 g Frijobel fish stew mix Frijobel

1 onion

2 clove of garlic, chopped

2 tablespoon extra virgin organic coconut oil

1/2 tablespoon powdered coriander

1/2 tablespoon powdered ginger

1 teaspoon safran

2 tablespoon garam masala

80 ml tomato pulp

1 teaspoon lime juice

200 ml light organic coconut milk

200 ml light cream

1 pinch of white pepper

Fleur de sel

Fresh coriander, as needed

INSTRUCTIONS

STEP BY STEP

    Start by separating the fish from the seafood, reserving the latter.

    Cook the fish in boiling water seasoned with salt. When it is cooked, but firm, strain the cooking water and reserve it.

    Remove the skins and bones from the fish and break them into medium pieces. Reserve.

    Heat the coconut oil and add the finely chopped onion, letting it soften. Add the chopped garlic and spices. Cook over a low heat for 2 minutes.

    Add the tomato pulp and 100 ml of the fish broth. Season with salt and pepper and cook for another 5 minutes or until the sauce thickens.

    Add the coconut milk and the lemon juice, bring to a boil and add the cream as well.

    Reduce heat to medium, add the seafood and cook for 10 minutes

    Also add the fish and cook for another 10 minutes (if the sauce thickens too much or is not enough, add more fish broth).

    Correct the salt, sprinkle with coriander and serve with basmati rice.
