INGREDIENTS

8 large frozen sardines Frijobel

4 cloves of garlic

1/2 onion

1 tablespoon organic fresh parsley

2 tablespoon fresh organic coriander 

Chopped coriander

1 pinch of white pepper

Salt, as needed

120 ml extra virgin olive oil, classic

500 g small roasting potatoes

Olive oil, as needed

 

INSTRUCTIONS

STEP BY STEP

    Clean the sardines and remove the scales. Wash them well inside. Season with salt and let them rest for two hours.

    Transfer the sardines to an oven tray and cover them with the chopped onion and the sliced garlic cloves. Season with pepper and add the parsley and the coriander.

    Drizzle with olive oil and bake in the oven, preheated to 180ºC, for 30 minutes. Carefully turn the sardines halfway through.

    In the meantime, wash the potatoes thoroughly, give them a 5-minute pre-cook in boiling water, and put them on a tray.

    Drizzle with a little olive oil and sprinkle them with lots of salt. Mix well and bake while the sardines are cooking.

    When they are ready, press them to open (or punch them). Serve the sardines with the dressing sauce and the punched potatoes and sprinkle with more chopped coriander.
