INGREDIENTS

6 Frijobel Black Tiger shrimp

400 g chicken breast, in cubes

1/2 onion

1 drizzle of extra virgin olive oil 

1 large clove of garlic

100 ml coconut milk

80 g crushed tomatoes

3-4 pineapple slices

1 full tea spoon Madras curry

Salt, as needed 

Fresh coriander, as needed

1 pinch of white pepper 

Basmati rice, as needed

 

INSTRUCTIONS

STEP BY STEP

    Start by cutting the chicken breasts into cubes, not very big. Season with salt and pepper and let it set for 30 minutes.

    Heat the olive oil and add the finely chopped onion and garlic clove. Let them soften and add the peeled and chopped tomatoes, stirring, sautéing for two minutes.

    Add the curry and the chicken, cooking it on both sides until it gains colour. Add the shrimp and cook.

    When the chicken and the shrimp are ready, drizzle with coconut milk, mix and let it cook for two minutes.
