SHRIMP AGRIDOCE

AND RICE NOODLES

INGREDIENTS

300 g Frijobel 40/ 50 Vannamei shrimp Frijobel

200 g glass noodles

3 tablespoons coconut oil

1 pinch of white pepper

250 g Chinese vegetable mix

Fleur de sel

Fresh coriander, chopped

 

Sweet and sour sauce

1 tablespoon coconut oil

300 ml hot water

1 tablespoon low salt soy sauce

3 tablespoons rice vinegar

2 tablespoons (full) white sugar

2 tablespoons ketchup

5 tablespoons corn starch

1 tablespoon tomato paste

80 ml cold water

Salt, as needed

INSTRUCTIONS

STEP BY STEP

    Start by peeling the shrimp leaving some with the head and tail tip for decoration.

    Heat the coconut oil and sauté the shrimp until they turn pink and season with salt and pepper.

    Add the Chinese vegetables, previously thawed and drained.

    In the meantime, heat water seasoned with salt and, as soon as it comes to a boil, pour it over the rice noodles, wait 3-4 minutes and drain.

    Mix the oil with the tomato paste and the ketchup. Bring to heat and add the hot water, little by little.

    Add soy sauce, vinegar, sugar and a pinch of salt to the previous preparation.

    Mix and add the corn starch previously dissolved in cold water to the sweet and sour sauce. Lower the heat and let it thicken, stirring occasionally.

    Mix the sweet and sour sauce with the shrimp and vegetables, let it thicken a little and incorporate the drained noodles.

    Gently mix the sauce in the noodles, sprinkle with chopped coriander and serve immediately.
