CUTTLEFISH AND SHRIMP CATAPLANA

INGREDIENTS

500 g large Frijobel cuttlefish Frijobel

8 Frijobel Black Tiger shrimp Frijobel

1 large onion 

3 cloves of garlic

Chilli sauce

1 a drizzle of extra virgin olive oil

80 ml white wine

1 pinch of white pepper

1 good pinch of sweet paprika

Salt, as needed

lemon juice, as needed

3 tomatoes

4 medium potatoes

4 stalks of fresh coriander, organic

2 stalks of fresh parsley, organic

INSTRUCTIONS

    Start by cutting the cuttlefish into medium cubes and season with salt, pepper and lemon juice.

    Set aside for 30 minutes to 1 hour.

    Add by alternating layers of onion in half-moons, sliced potatoes, sliced tomatoes and cuttlefish with seasoning to the cataplana.

    Finally season with parsley, garlic, salt, chilli sauce, paprika and pepper.

    Drizzle with olive oil and white wine and add the shrimp and coriander. Bring to a simmer, covered, for 40 minutes.
